PLAN
Prepare and store mixtures based on eggs, water, colorings and natural flavourings. Identify the quantity of puff pastry suitable for the different formats of fresh unfilled pasta. Research and use of tools with which to prepare fresh pasta. Preparation of traditional pasta  (tagliatelle, pappardelle, tajarin, broth quadrucci, lasagne) and innovative pastas (Ligurian corzetti with seasonal herbs, colored garganelli al comb). Recognize and create the non-filled pasta shapes typical of the various Italian regional traditions and hand-package colored and decorated pastas. Manage cooking, seasoning and storage of handmade pastas.

The entire course includes an introduction to good food practices and the selection of flours and raw materials suitable for one's diet, to the preparation of balanced dishes that manage to reconcile territory, seasonality, goodness and beauty.

COURSE PROGRAM


WHOLE DAY

9:00 - 9:30 Presentation and choice of Mulino Valsusa grains based on the product to be made
9.30 - 11.00 Preparation of the dough, choice and use of tools for making specific pasta
11:00 - 11:15 Coffee break
11.15am - 1.00pm Preparation of traditional pastas (tagliatelle, tajarin, quadrucci and lasagne) and innovative pastas (Ligurian corzetti, garganelli al comb, colored and decorated pastas)
1pm - 2pm Break for lunch
2.00pm - 4.30pm Management of cooking, seasonings and storage
4.30pm - 5pm Conclusions and delivery of certificates
