THE MILL

This is the story of the ancient water mill that comes back to life, in the municipality of Bruzolo, just over forty kilometers from Turin. The system still visible today, with the ancient part restored (water wheel, millstones, sifter and tools) and functioning, dates back to 1884 but its location is on the ancient "road of the mills" of the town, a street which was three mills active since the Middle Ages.
It is the first mill in the entire Susa valley to return to full production with the aim of developing a 100% traceable and sustainable local agricultural supply chain, repopulating the lands of the Susa valley with ancient traditional wheat varieties.

Furthermore, the project has a positive impact on the territory and on tourism, becoming a place for aggregation and tasting.

When soils are healthy, populations are healthy. For this reason it is important to build production chains capable of working consistently towards this end. But all this is not enough if the population is not informed and information becomes the means of creating culture, gathering local knowledge and knowledge, encouraging meetings and cultural exchange, raising awareness among the population of "territorial innovation".

FARMERS GUARDIANS OF A RICH HERITAGE OF GENES

We want to achieve this objective: repopulate the lands of the Susa valley with traditional ancient variety grains and other varieties of cereals such as rye and corn, to build a 100% traceable and sustainable supply chain, with raw materials born, cultivated and transformed in the valley of Susa.
Furthermore, we want to enhance local products such as chestnuts through the transformation of the raw material.

To succeed in our aim we ask for compliance with the parameters defined in the production regulations, created specifically by Mulino Valsusa together with local agronomists and farmers, so that uniformity of cultivation can be guaranteed by favoring natural growth systems.
