Knowing bread and its art, knowing flour and its characteristics, kneading methods without equipment, fermentation and the right cooking time. The essential use of sourdough leavening, the differences with compressed yeast leavening... for a nutritionally superior and ethically correct result. A full day journey through the secrets of the trade, which will lead you from theory to practice up to tasting, to make you true bakers.
COURSE PROGRAM
WHOLE DAY
| 9:00 - 9:30 | Presentation and choice of Mulino Valsusa grains based on the product to be made |
| 9.30 - 11.00 | Preparation of the dough, demonstration of the various kneading phases and the suitable method for making the dough without technical equipment. In-depth study on fermentation and sourdough. |
| 11:00 - 11:15 | Coffee break |
| 11.15am - 1.00pm | The manufacturing processes and how to create - and balance - the recipe according to your needs. The shaping, the final leavening and the cooking. |
| 1pm - 2pm | Break for lunch |
| 2.00pm - 4.30pm | Final preparation of the dough, detailed explanation of the "mass leavening" (or mass fermentation) during the night. Presentation of further cooking and dialogue on the result obtained. |
| 4.30pm - 5pm | Tastings, conclusions and delivery of certificates |
