Acquire competence, awareness and independence in the management of pan-baked pizza and focaccia dough, with extensive product insights to better understand the relationship between the raw materials, the result and the desired textures, and without being bound by a particular method.
COURSE PROGRAM
WHOLE DAY
9:00 - 9:30 | Presentation and choice of Mulino Valsusa grains based on the product to be made |
9.30 - 11.00 | Preparation of the dough, demonstration of the various kneading phases and insertion of the individual ingredients |
11:00 - 11:15 | Coffee break |
11.15am - 1.00pm | In-depth study of the various processes, how to create and balance the recipe according to your needs, shaping and rolling out loaves |
1pm - 2pm | Break for lunch |
2.00pm - 4.30pm | Preparation of various toppings for pizza and focaccia, cooking of the product filling |
4.30pm - 5pm | Conclusions and delivery of certificates |
