Einkorn wheat is the first wheat ever to have been cultivated and used by man. It is a small plant with thin leaves, the ears of which have a single small, soft grain. It is an effective antioxidant and has an essential role in cellular metabolism. It also contains vitamin E, zinc, iron and manganese.


How to use:
It is cooked alone or in combination with other cereals or other legumes. Excellent for cold salads, risottos with porcini mushrooms. It pairs excellently with red wines. Its grain absorbs water quickly and cooks more quickly, therefore it can be cooked using the same methods as a risotto, just keeping in mind that it requires a few more minutes.

General advice:

Although the legumes are all carefully ventilated (a process that eliminates light impurities), calibrated (a process that selects the best grains), destoned (a process that eliminates pebbles), and asymmetrically selected (a process that eliminates immature, stained grains, etc.) , we suggest in any case to proceed with a further wash under running water. The use of a strainer or colander is very useful in this case.
