Einkorn, commonly called small spelled, is believed to be the first cereal "domesticated" by man around 7500 BC, in the Middle East.
Spelled from Mulino Valsusa is grown in the fields of Tuscany, in the province of Florence.

Spelled has a low gluten content but is suitable for bread making with excellent results, as well as the preparation of cakes and biscuits. It is an effective antioxidant, has an essential role in cellular metabolism and contains vitamin E, zinc, iron and manganese.

Through natural stone milling, which does not overheat the grain, a distinctly wholemeal flour with an ancient, strong and unmistakable flavor is obtained.

Shelf life and conservation

Our flour lasts up to 6 months after milling, without preservatives and without chemicals. Keep in a cold and dry place.
