    Seven excellent ancient varieties of Piedmontese corn combined together to obtain a rustic flour, slowly stone-ground, and to taste real mountain polenta . We select the best grains of ancient Piedmontese corn varieties from farms that share our principles and values, to obtain a truly unique blend . The result is a polenta that is an excellence of taste , with a desired consistency like real mountain polenta.

    In the kitchen: Cooking varies between 50 and 70 minutes. Water: 4 liters per 1kg of flour.

    In desserts: Ideal for polenta, combined with meat, fish and cheese; it is also perfect mixed with other flours for making desserts, cakes and biscuits.

    We do not add preservatives of any kind ; our flours are unrefined and are rich in fibre, minerals, proteins and vitamins. Flours without the presence of pesticides and glyphosate.
    By leaving part of the bran petals in the flour, all the aromas of the corn will be enhanced during cooking.

    Shelf life and conservation

    Our flour lasts up to 8 months after milling. Product subject to natural weight loss. Store in a cool, dry place away from sunlight.
